BBQ Free Range Chicken

BBQ season is the perfect time to gather with friends and family, fire up the grill and indulge in mouthwatering dishes. Whether you’re a fan of classic burgers or flavourful chicken, there’s something for everyone.

 

Here at Herb Fed, we have just launched our new BBQ range of seasonal products. We thought we would take time to provide some top tips on grilling a whole chicken and also a flat iron chicken which can result in a juicy and delicious meal.

 

Firstly, here are some general BBQ grilling tips:

 

Preheat the Grill: Make sure your grill is hot before adding the food. This ensures proper searing and prevents sticking.
Oil the Grates: Brush the grates with oil to prevent food from sticking.
Use a Meat Thermometer: While we are quite gun-ho here and know when it’s done, if you need piece of mind then invest in a good meat thermometer to check doneness accurately.
Let It Rest: After grilling, let the meat rest for a few minutes. This allows the juices to redistribute and really does improve the eating experience.

 

Here are a couple of BBQ free range chicken methods you can try:

 

 

Grilled BBQ Whole Free Range Chicken:

 

Ingredients:

 

• 2 whole chickens
• 1 cup sweet and tangy BBQ sauce
• 1 teaspoon rock salt
• 1 teaspoon fresh ground pepper

 

Instructions:

 

1. Pat the chicken dry with paper towels.
2. Loosen the skin and spoon BBQ sauce under the skin, spreading it across the breast and thighs.
3. Truss the chicken and season the skin with salt and pepper.
4. Prepare a grill fire to 300°F (149°C) using hickory or pecan for smoke flavour.
5. Place the chickens on the grill over indirect fire.
6. Cook with the lid closed for about 1 hour.
7. Use a digital thermometer to check the internal temperature. When the chicken reaches about 150°F (65.6°C), brush it with BBQ sauce.
8. Continue to cook with the grill closed until the chicken reaches 165°F (73.9°C) in the thickest part of the thigh close to the bone.
9. Remove from the grill and let it rest for about 20 minutes before serving.

 

Storage and Reheating:

 

• Store cooled chicken in a zip-top bag or airtight container in the refrigerator for up to 4 days.
• Freeze in a freezer bag or a vacuum-sealed bag for up to 3 months.
• Reheat chicken in a skillet with additional BBQ sauce over medium heat, stirring occasionally until heated through.

 

 

Super Simple Flat Iron Free Range Chicken:

 

In our shop you’ll find our flat iron chicken. Similar to a spatchcock but a whole herb fed chicken that has been completely de-boned, allowing for quicker and more even cooking.

 

Instructions:

 

1. Season your flat iron chicken liberally with your favourite rub or marinade, then massage it in.
2. Roast at 400°F (204°C) for about 30 minutes, turning to check both sides (and if using a meat thermometer) ensure it reaches 165°F (73.9°C) in the thickest parts.
3. Remove from the grill and let it rest a good few minutes before serving.
