Butter chicken

A hearty winter warmer.

Serves: 2ppl

  • Two Herb Fed skinless chicken breasts

  • 1 onion diced

  • 300ml Chicken stock

  • Double cream

  • 1tsp cumin powder

  • 2tsp sugar

  • 1tsp tandoori masala powder

  • 2 cloves

  • 2tsp almond powder

  • 1tsp coriander powder

  • 1tsp turmeric powder

  • 2tsp mild chilli powder

  • 70g unsalted butter

Wet ingredients
  • 2tbsp natural yogurt

  • 1/2tbsp tomato ketchup

  • 1/2tsp tandoori masala powder

  • 1tbsp tomato purée

Mix all together

  • Melt the butter in a pan and fry off the onions.

  • Then add the dry spices, including sugar. Give it a stir and fry for about 30 seconds.

  • Add the chicken and mix well.

  • Add half the chicken stock, simmer for 2-3 minutes.

  • Add the wet mix, cooking for a couple of minutes.

  • Add the rest of the chicken stock & cook for a further 5-10 minutes or until the chicken is cooked.

  • Finally add the double cream to your desired consistency.
