Pre-heat the oven to 200c

Fry the bacon until the fat has rendered and the bacon is crispy then remove with a slotted spoon

Brown the chicken on all sides until almost cooked through then remove

Boil pasta until al dente - usually a minute or two less than the packet instructions. Drain and set aside

Gently cook the onions & peppers until soft then add garlic & cook for another minute

Add tomato puree and cook for another minute

Add in the paprika, oregano & thyme, followed by the chopped tomatoes & cream (if using) & stir thoroughly

Season with salt & pEpper to taste

Add the chicken, bacon & pasta to the sauce and cook for a couple of minutes

Transfer to a large baking dish and sprinkle over the grated cheese

Cook in the oven for 20 minutes or until the cheese is golden brown

Garnish with the parsley & serve
