Chicken Souvlaki

Delicious Greek-style spiced kebabs

Serves: 4

  • 500g chicken breast- diced

  • 3 cloves garlic, crushed

  • 1tbsp dried oregano

  • 1/2tsp paprika

  • 1/2tsp dried rosemary

  • 1/2tsp salt

  • 1/2tsp pepper

  • Juice of 1 lemon

  • 50ml olive oil

  • Dice the chicken breast in to cubes if whole fillets

  • Add all marinade ingredients together then pour over chicken and allow to marinate for at least 30 minutes

  • Thread the chicken on to skewers

  • Cook directly over charcoal, turning regularly until you reach an internal temperature of 73C. You want a slight char on the outside while remaining juicy on the inside

  • If cooking inside, cook under a hot grill, turning regularly

Serve with salad, flatbreads and your favourite sauces
