Honey and Soy BBQ Chicken Thighs

This mouthwatering dish is perfect for the barbie during the week or the weekend. Serve with rice, noodles, salad or whatever you fancy. Forget the takeaway and enjoy this fakeaway!

Serves: 4-6 people

  • 6-8 bone in, skin on chicken thighs

  • 80ml honey

  • 60ml soy sauce

  • 2 spring onions, chopped

  • 2tbsp vegetable oil

  • 4 garlic cloves, minced

  • 1 inch piece of ginger, minced

  • 1tbsp rice wine vinegar

  • Combine all ingredients apart from the chicken.

  • Dry the chicken thighs with kitchen roll then add to a baking dish or large bowl.

  • Pour in the marinade and leave in the fridge for at least 30 minutes, preferably overnight.

  • Set your BBQ up for 2 zone cooking and heat to 220c. If using an oven, heat to 220c.

  • Add chicken and marinade to a cast iron skillet then cook for 30-35 minutes.

  • The chicken should have an internal temperature of 73c+.
