Peanut & Chicken Stew

A dish popular throughout West Africa - whats not to like about chicken and peanuts?

Serves: 4

  • 2lb skin on, bone in chicken thighs

  • 2tbsp vegetable oil

  • 1 onion, diced

  • 1x 2" piece of ginger, minced

  • 5 garlic cloves, minced

  • 4 medium sized potatoes, diced

  • 1 tin chopped tomatoes

  • 500ml chicken stock

  • 1 cup peanut butter

  • 1 cup roasted peanuts

  • 2tsp ground coriander

  • 1tsp cayenne pepper

  • Salt & pepper

  • Season the chicken and then brown them in hot oil, about 5 minutes per side. Set aside when done

  • Add the onions for 5 minutes then add in the garlic and ginger and cooked for another minute

  • Add in the potatoes, the chicken stock, the tin of tomatoes, peanut butter, peanuts & cayenne pepper then stir well to combine. Season to taste

  • Add the chicken then simmer for 45 minutes, or until the chicken is cooked through and the potatoes are soft

  • Serve with rice or on its own
