Season the chicken and then brown them in hot oil, about 5 minutes per side. Set aside when done

Add the onions for 5 minutes then add in the garlic and ginger and cooked for another minute

Add in the potatoes, the chicken stock, the tin of tomatoes, peanut butter, peanuts & cayenne pepper then stir well to combine. Season to taste

Add the chicken then simmer for 45 minutes, or until the chicken is cooked through and the potatoes are soft

Serve with rice or on its own
