Sweet and Sour Chicken

Quite simply an absolute classic!

Serves: 4 ppl

  • 1/2 yellow pepper (cubed)
  • 1/2 red pepper (cubed)
  • 1 small onion (cubed)
  • 100g pineapple chunks
  • 1 egg beaten
  • 600g diced chicken
  • 1 tbsp light soy sauce
  • 200g cornflour

 

For the sauce
  • 1/2 CUP WATER
  • 1/4 CUP WHITE VINEGAR
  • 1/4 CUP KETCHUP
  • 1/4 CUP SUGAR 
  • 1/4 CUP PINEAPPLE JUICE
  • 2 tsp CORNFLOUR mixed with 2 tsp water (to be added separately)
  • Heat oil in a pan or deep fat fryer to 180 degrees c
  • In a bowl mix the soy sauce, egg, and diced chicken
  • Add the cornflour and mix well until each piece of chicken is coated and set aside
  • For the sauce, in a saucepan mix the sauce ingredients (apart from the cornflour slurry), add the onions and peppers, bring to a boil and simmer for 10 mins
  • Add the cornflour slurry to thicken
  • Fry the chicken pieces in the oil for about 5-8 minutes until nice and crispy
  • Once cooled, drain and add the chicken pieces to the sauce mixture and serve with rice
