This dish (usually with minced pork) is a firm favourite in The Smokin' Elk household so I've adapted it slightly for leftover turkey and I tell you what, this is now my favourite turkey leftover dish! Don't be worried about the amount of chillies, they lose some strength when fried, but feel free to use the amount you feel comfortable with!
I'm lucky enough to have a Thai shop local to me but you can get Thai basil in most supermarkets now. This dish is so quick and simple but an absolute taste sensation I assure you!

Ingredients
Method
400g leftover turkey, chopped
5 garlic cloves, crushed
8 birds eye chillies, finely chopped
3tbsp oyster sauce
1tbsp soy saucE
30 Thai basil leaves
Stir fry the garlic and chillies for 1 minute
Add turkey and heat through
Add oyster sauce & soy sauce and cook for another minute
Add Thai basil then remove from heat and serve with boiled rice and a fried egg on top
