Soak the chicken fillets in buttermilk for at least an hour

Mix 1tbsp cajun spice in to the flour

Heat a pan of oil or fat frier to 190c

Remove the chicken from the buttermilk and shake to remove excess

Coat the chicken in the flour and shake

Dunk the chicken in the buttermilk and flour again

Carefully lower in to the hot oil then repeat with the other fillet

Cook to internal temperature of 73c then remove and drain the chicken on kitchen roll. While draining, add cheese slices to melt.

Lightly toast your bun and then build the burger of your dreams! The Smokin Elk has gone with lettuce, tomato, both chicken fillets, mayo, hot sauce, topped with a hash brown and pickled jalapenos. Try it, its an absolute winner!
