Turkey Leftovers – Turkey Chilli

Make the most of that leftover turkey with this classic use of leftovers - turkey chilli! 

Serves: 4

  • 1 onion, diced

  • 1 pepper, diced

  • 2 garlic cloves, minced

  • 1-2 long red chillies, diced

  • 1tbsp tomato puree

  • 500g leftover turkey

  • 1 tin chopped tomatoes

  • 1tsp oregano

  • 500ml chicken or turkey stock

  • 1 tin cannellini beans

  • Salt & pepper

  • In a large pan, gently cook the onion and pepper for 5 minutes

  • Add the garlic & chillies and cook for another 2 minutes

  • Add the tomato puree and cook for another minute

  • Add the leftover turkey and the chopped tomatoes and stir thoroughly

  • Next add in the oregano, chicken stock and cannellini beans. Stir and bring to the boil

  • Season with salt & pepper then simmer until the chilli is your desired consistency

Grab some crusty bread & butter and dig in!
