Turkey Leftovers – Turkey Massaman

Massaman is an all-time favourite curry and is a perfect use of that leftover turkey! This is a real quick & simple dish but really packs some flavour!

Serves: 3-4

  • 1 packet of massaman curry paste

  • 1 can coconut milk

  • 300g leftover turkey

  • 200g par-boiled potatoes

  • 1 onion, roughly diced

  • Dry roasted peanuts


  • Start by combining the curry paste and half of the coconut milk in a pan & bring to a low simmer

  • Add the onion and cook for 3-4 minutes

  • Add in the rest of the coconut milk

  • Add your turkey & par-boiled potatoes then cook until potatoes are tender and turkey heated through

  • Add more coconut milk if required

  • Lastly, finish with the dry roasted peanuts and serve with some Thai jasmine rice or plain rice
