Turkey Leftovers – Turkey Ramen

If you’re lucky enough to have any leftovers this year here is some inspiration courtesy of Smokin Dan.

Serves: 1 person

  • 1x egg

  • 1x spring onion chopped

  • 1x small carrot grated

  • 1x handful diced cabbage

  • 1x portion ramen/egg noodles

  • Pinch of sesame seeds

  • Pinch of chilli flakes

  • Homemade turkey stock

  • Left over diced turkey (approx 250g)

  • 1 tbsp dark soy sauce

  • 1/4 tsp five spice

  • Heat the turkey stock in a saucepan, add the soy sauce, five spice and chilli flakes.

  • Bring to a boil, add the noodles and allow them to cook for 5 mins.

  • Once the noodles are cooked, put them in to a bowl, leaving the stock in the pan.

  • Add the diced turkey to the stock and heat for 5 mins. Whilst waiting, boil an egg for 2 mins, and then place in cold water to cool down.

  • Once cool, peel the egg shell and cut the egg in half.

  • Pour the stock in to the bowl of noodles, add the carrot, cabbage, egg and spring onion to serve.
