Turkey Leftovers – Turkey Shakshuka

A tasty leftover turkey recipe

Serves: Up to 6

  • 1 tbsp olive oil
  • 1/2 onion, diced
  • 1 clove garlic, crushed
  • 1 bell pepper, diced
  • Leftover turkey (amount down to personal preference)
  • 2 cans chopped tomatoes
  • 2 tbsp tomato puree
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 6 eggs
  • Salt and pepper
  • Fresh chopped parsley for garnish
  • Heat oil then gently fry the onion and pepper until softened.
  • Add garlic and cook for another minute.
  • Add tomato puree and continue to cook for another minute
  • Add turkey and spices and cook for a further minute
  • Add in both tins of chopped tomatoes then cook until your desired consistency
  • Season well with salt & pepper
  • Next, make 6 wells in the sauce and crack in the eggs
  • Cover and cook until the eggs are done. They should be white on top with nice runny yolks
  • Garnish with parsley if desired then dig in with a load of fresh bread and butter!
