Heat oil then gently fry the onion and pepper until softened.

Add garlic and cook for another minute.

Add tomato puree and continue to cook for another minute

Add turkey and spices and cook for a further minute

Add in both tins of chopped tomatoes then cook until your desired consistency

Season well with salt & pepper

Next, make 6 wells in the sauce and crack in the eggs

Cover and cook until the eggs are done. They should be white on top with nice runny yolks

Garnish with parsley if desired then dig in with a load of fresh bread and butter!
