Turkey Leftovers – Turkey & Sweetcorn Soup

If you’re lucky enough to have any leftovers this year here is some inspiration courtesy of Smokin Dan.

Serves: 2-3ppl

  • 1x litre homemade turkey stock

  • 300g left over diced turkey

  • 1x tin cream style corn (approx 400g)

  • 2x beaten eggs

  • 1x spring onion finely diced

  • 2 tsp cornflour mixed with 2 tbsp water

  • 1 tsp sesame seed oil

  • Heat the turkey stock, add the tin of cream corn, the turkey, and simmer for 5 mins.

  • Add the cornstarch slurry to thicken, and once thickened, pour the egg mix (from a little height) stirring at the same time to create egg strands.

  • Season with salt to taste, add a splash of sesame seed oil and top with spring onion.
