Chicken Nugget Flights

This is a great way to entertain the children this summer holidays. These chicken nuggets are so simple to make and store wonderfully in a container in the fridge, or portion and freeze. You can bake them in the oven, air fry or deep fry- you’ll just need to adjust the cooking times according. TIP- Stale bread is great for the crumbs. Should you want to swap and use the cornflakes or stale crackers just use the same weight as bread crumbs. Either way, we're more than sure your kids are going to love these topped with all the things they love, or simply just dip them in some tomato sauce and enjoy.

Ingredients


  • 4 Herb Fed chicken breasts 
  • 300g breadcrumbs or 300g Cornflakes
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon plain flour
  • 3 eggs, whisked together

Method


  1. You’ll need three bowls. In one bowl whisk together the eggs. In another add the plain flour and in the third add your finely chopped breadcrumbs, salt and pepper, cornflour and paprika and mix to combine.
  2. Slice your chicken breasts into approximately 6-8 equal size pieces.
  3. Dip each chicken piece in the flour, then the egg and then coat with the breadcrumb mix and place on a plate. Repeat until each chicken piece is covered.
  4. Heat a medium sized frying pan with approximately 500g vegetable oil.  You’ll need to fry the chicken in 2-3 batches, approximately 3-4 minutes, until crispy and the chicken is cooked through. Check one - they should be moist inside not dry and crispy on the outside.
  5. Keep the first batch warm while you cook the rest.
  6. For fun we then added different toppings - obviously do what you want but here are our toppings.

- Chicken soaked in milk then coated in cornflakes, topped with yogurt & strawberry

- Chicken Nugget topped with BLT

- Chicken nugget with peanut butter & jelly

- Waffle, nugget, crispy bacon & maple syrup

- Pizza topped nugget, tomato sauce, melted cheese, olive, red and green pepper & basil

- Nugget topped with crème fresh, caviar & chive
