Chicken Souvlaki

Ingredients


  • 500g chicken breast- diced
  • 3 cloves garlic, crushed
  • 1tbsp dried oregano
  • 1/2tsp paprika
  • 1/2tsp dried rosemary
  • 1/2tsp salt
  • 1/2tsp pepper
  • Juice of 1 lemon
  • 50ml olive oil

Method


  1. Dice the chicken breast in to cubes if whole fillets
  2. Add all marinade ingredients together then pour over chicken and allow to marinate for at least 30 minutes
  3. Thread the chicken on to skewers
  4. Cook directly over charcoal, turning regularly until you reach an internal temperature of 73C. You want a slight char on the outside while remaining juicy on the inside

If cooking inside, cook under a hot grill, turning regularly

Serve with salad, flatbreads and your favourite sauces
