Chicken with Lager – One for the Dad’s

You’ll not believe how truly wonderful this dish is until you try it. It’s the perfect little showcase to impress guests, the pale lager chicken has a wonderful sweetness about it that compliments that Smokey pancetta and the creamy sweet onions. The herbs give off such a lovely earthy flavour that really sets this dish apart from all the rest.

Ingredients


  • 4 large onions, thinly sliced
  • 100g smoked pancetta or smoked bacon, chopped small 
  • 500ml pale lager
  • 4 skin-on chicken breasts
  • 3 rosemary sprigs, plus extra to garnish
  • salt and pepper

Method


  1. Heat a dry nonstick frying pan with a splash of oil and cook the chicken, skin side down, until golden brown.
  2. Turn the chicken over and slightly colour the base but not cooking through just yet. Remove from the pan and put aside. 
  3. Add the onions and pancetta or bacon to the pan and very gently cook until the onions melt down then and 4 tablespoons of the lager.
  4. Cook over medium heat for 4-5 minutes until the fat from the pancetta has melted.
  5. Add the chicken pieces back to the pan. Season with salt and pepper and pour over the remaining lager.
  6. Add the rosemary and sage, and cook over medium heat for 30 minutes.
  7. Transfer to the serving platter and garnish with extra rosemary leaves.
