Have you tried flat iron chicken? It’s a fantastic way to enjoy a whole, boneless chicken and is perfect for the BBQ. Flattening the chicken helps it cook evenly, and ours took around 40 minutes on the Kadai, using wood for a delicious smoky flavour. We generously basted the chicken with chimichurri, rubbing half the sauce over the chicken before cooking and spooning the rest over once cooked. Absolutely divine! Chimichurri is a fresh, vibrant herb dressing traditionally made with parsley, but we’ve used fresh coriander here – either works beautifully. Give it a go… we’re sure you’ll love it!

Ingredients


1 Herb Fed flat Iron Chicken

Small bunch of coriander, finely chopped

1 large garlic clove, crushed

1 small red onion, finely diced

1 red chilli, deseeded and finely chopped

5 tbsp extra virgin olive oil

2 tbsp white wine vinegar 

Juice of one small lime 

Pinch of salt 

Method


Pop all the finely chopped ingredients into a bowl or glass jar, stir in the oil, lime juice and vinegar along with a pinch of salt. 

 Taste and adjust to your liking, sometimes we add more vinegar, chilli or salt - just run with your own tastebuds and adjust accordingly!  Â
