Word has it that the Mediterranean diet is one of the best diets you can feed yourself - the food is high in vitamins and minerals, always super fresh and packed to the brim with the colours of the rainbow. Mediterranean food is fragrant, healthy and oh so very tasty.   Tzatziki is high in protein due to the Greek yogurt and helps with fullness and muscle repair, not forgetting the gut health probiotics from the live cultures. Garlic & Cucumber bring antioxidants, hydration, and a little immune boost.  Serving this along side the wonderful herb fried chicken you really are on to a winner - not only is chicken high in protein which helps to build & repair muscles, but it helps you feel fuller for longer. It's also low in fat, packed with key nutrients, like vitamins B3 and B6 which support energy, metabolism and brain function, phosphorus, which is important for bones and teeth and selenium which supports immunity and thyroid health!

Ingredients


Chicken Marinade

  • 4 Herb Fed Poultry Chicken Supremes
  • 2 tablespoons olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon black peppe
  • 1 lemon, zested and juiced
  • 1 tablespoon dried Oregano
  • 2 large garlic cloves, crushed

Tzatziki Recipe

  • 400g Thick Greek yogurt
  • 1 garlic clove, crushed
  • 1/2 Cucumber, grated
  • 1 tablespoon fresh lemon juice
  • Fresh mint leaves, pulled from 2 stalks and chopped fine
  • Pinch of salt
  • 1 tablespoon olive oil
  • Pinch of dried oregano

  • Juicy tomatoes
  • Crunchy cucumber
  • Olives
  • Red onion
  • Feta cheese
  • Chopped mint leaves to garnish

Method


Chicken Marinade:

  1. Rub the chicken in the marinade and set aside for 30 minutes.
  2. Then bake in an oven at 200 degrees for 25 - 30 minutes or until the juices run clear.

Tzatziki:

  1. Grate the cucumber on to a clean towel and then gently squeeze out the excess water. Then in a bowl combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, mint & oregano.
  2. To put the meal together... Pack the bowl with steamed rice mixed with lentils, chopped crisp green lettuce, sweet juicy tomatoes, Fresh crunchy cucumber, olives, red onion and sprinkled with feta cheese. Top this with the succulent Chicken, add a big spoon of tzatziki, drizzle with the fresh lemon juice and an extra drizzle of olive oil. Garnish with chopped mint leaves.
