Looking for something a little different to your traditional Turkey and stuffing sandwiches? Look no further, as these truly wonderful Italian style open turkey sourdough sandwiches will really brighten up the "in-between" days and take you back to those glorious blue skies and warmer days that we all so crave! And they taste absolutely delicious. You can use as much or as little turkey as you have leftover. I’ve used breast meat on these, but thigh is just as delicious. Whatever suits your own taste...

Ingredients


  • 1 large red pepper, cut into thick slices
  • 2 slices of sourdough bread
  • 2 tablespoons basil pesto
  • Leftover sliced turkey (as much/little as you have)
  • 1 mozzarella sliced
  • Sprinkle Salt and freshly ground black pepper & dried oregano
  • Fresh Basil to garnish

Method


  1. Preheat your oven to 200*.
  2. In a small bowl, toss the red pepper slices with a splash of Olive oil. Spread the pepper slices out on a baking sheet and roast until the peppers start to blister in spots, about 15 minutes. Remove from the oven and set aside to cool slightly.
  3. Lightly toast the sourdough and place them on a baking sheet. Spread the pesto evenly on the top of the sourdough slice, then add the turkey, roasted pepper and mozzarella cheese.
  4. Place in the oven until the cheese has melted, 3 to 5 minutes. I recommend watching the sandwiches as the cheese will melt quickly.
  5. Garnish and season.
