Jerk Drums

There isn’t a lot that beats the flavour of char grilled jerk chicken. Please do it justice and make sure you cook these over charcoal on a BBQ for maximum flavour!

Ingredients


  • 8 Herb Fed chicken drumsticks
  • 2 scotch bonnets, roughly chopped
  • 1” piece of ginger, peeled and roughly chopped
  • 5 spring onions, white & green bits, roughly chopped
  • 7 garlic cloves, roughly chopped
  • 1 onion, roughly chopped
  • Juice of 3 limes, zest of 1 lime
  • 3tbsp dark brown sugar
  • 1tsp allspice
  • 1tsp nutmeg
  • 2tsp dried thyme
  • 1tsp cinnamon
  • 1tsp salt
  • 1tsp pepper
  • 60ml dark soy sauce
  • 100ml Vegetable oil

Method


  1. Add all marinade ingredients to a blender and blend to a paste
  2. Using a sharp knife, make incisions in the drumsticks
  3. Pour half the marinade over the chicken and rub in thoroughly
  4. Marinade overnight if possible but preferably at least an hour
  5. Set up your BBQ with 2 zones – a direct heat zone and an indirect zone. You want it set to 220c. If cooking in an oven, set your oven to 220c
  6. Cook on the indirect side with the lid down for 30 minutes
  7. After 30 minutes, start to brush on the reserved marinade, flipping and brushing on every 5 minutes
  8. Once the chicken hits an internal temperature of 75c, move them to the direct side of the BBQ
  9. Cook with the lid down for 1 minute then flip the drumsticks and cook with the lid down for another minute
