Slow Cook Turkey Fajitas

This is fool proof. A 'leave in the oven or slow cooker and the family help themselves' kind of fajita recipe! We make these regularly throughout holiday times and busy week days. We’ve used 2 Herb Fed Turkey legs as they were really quite plump and meaty, they’ve fed 4 hungry people, but would easily feed more with sides. You can also use chicken legs. The flavour was totally delicious, we’d recommend you give these a try.

Ingredients


  • 2 Turkey legs or 4 Chicken legs 
  • 1 white onion sliced fine
  • Mixed peppers of choice - we used orange, green and red for colour and sweetness.
  • Packet of Fajitas Seasoning ( we used a delicious Cajun Seasoning, see below)

Cajun Seasoning

  • 1/2 tsp Sea Salt
  • 2 tsp White ground pepper
  • 2 tsp Black ground pepper
  • 1 tsp Cayenne Pepper
  • 1 tbs paprika (if you like it spicy use hot paprika)
  • 1 tbs oregano
  • 1 tbs onion powder
  • 1 tbs garlic powder
  • 1 tbs dried thyme

Method


  1. Slice the onions and peppers super thin and arrange them on the bottom of a large ovenproof casserole dish.
  2. Place the turkey legs on top and coat everything with your favourite spices.
  3. Cover with a heavy lid and slow cook the day away. It’s that easy. No water required as the juices from the peppers, onions and turkey all produce enough steam in the dish when cooking.
  4. When you’re ready to eat simply shred the leg meat and mix in with the peppers and juices and serve in soft flour tortillas with salad, guacamole and some fresh chilli slices.
