The Perfect Christmas Stuffing – Chestnut & Apple

Ingredients


  • 1lb tin chestnuts, roughly chopped
  • 1lb cooking apples (peeled, cored and finely chopped)
  • 1 medium onion, finely chopped
  • Zest of 1 large orange
  • included with your turkey -  1 tablespoon parsley
  • included with your turkey -  1 tablespoon chopped sage
  • included with your turkey  -  1 sprig of thyme snipped
  • 4 sticks of celery (roughly chopped)
  • 1 1/2lb pork sausage meat
  • 1 egg, beaten
  • 2oz butter
  • 6oz firm white bread cut into dice
  • Salt and black pepper

Method


  1. Melt the butter and fry the onion, celery and thyme until soft.
  2. Remove from the heat and add the parsley, sage, bread, apples, chestnuts and orange zest.
  3. Season and mix well.
  4. Add the sausage meat and mix ingredients well, binding it together with the egg. Leave to cool.
  5. Ensure you re-weight the bird with stuffing to calculate the cooking time.
  6. Place any leftover stuffing on tray to cook later.
