Massaman is an all-time favourite curry and is a perfect use of that leftover turkey! This is a real quick & simple dish but really packs some flavour!
Ingredients
1 packet of massaman curry paste
1 can coconut milk
300g leftover turkey
200g par-boiled potatoes
1 onion, roughly diced
Dry roasted peanuts
Method
Start by combining the curry paste and half of the coconut milk in a pan & bring to a low simmer
Add the onion and cook for 3-4 minutes
Add in the rest of the coconut milk
Add your turkey & par-boiled potatoes then cook until potatoes are tender and turkey heated through
Add more coconut milk if required
Lastly, finish with the dry roasted peanuts and serve with some Thai jasmine rice or plain rice
