DESCRIPTION

Our free-range Herb Fed oyster-cut chicken legs are carefully prepared at the hip joint, leaving the succulent dark meat at the top of the thigh perfectly intact and trimmed for easy cooking. Raised using Herb Fed’s traditional farming methods, these slow-grown chickens are fed a natural diet enriched with fresh herbs, giving the meat exceptional depth of flavour. This versatile, flavour-packed cut is ideal for roasting, grilling, or braising, making it a delicious and affordable option for a wide range of dishes.

COOKING GUIDE

Preheat the oven to 190°C (fan) / Gas Mark 5. Line a baking tray with baking paper.
Drizzle a little olive oil over each leg. Season with sea salt, black pepper, and any of your favourite spices, rubs, herbs, or seasonings.
Transfer to the baking tray and bake for 20–25 minutes, depending on size.
If you have a digital food thermometer, the internal temperature should reach at least 75°C. Alternatively, pierce the thickest part of the leg close to the bone with a skewer and check that the juices run clear. Make sure there is no pinkness remaining in the chicken. If there is, return the chicken to the oven for a few more minutes.
Leave to rest on the tray for 5 minutes before serving.

Air Fryer Cooking
Drizzle a little olive oil over the legs and season with sea salt, black pepper, and any of your favourite spices, herbs, or seasonings.
Place in the air fryer, skin side up, and cook on the “roast” setting for 20–25 minutes at 190°C.
If you have a digital food thermometer, the internal temperature should reach at least 75°C. Alternatively, pierce the thickest part of the leg close to the bone with a skewer and check that the juices run clear. Make sure there is no pinkness remaining in the chicken. If there is, return the chicken to the air fryer for a few more minutes.

SERVING SUGGESTION

Serve Herb Fed oyster-cut chicken legs roasted, grilled, or braised for rich, succulent flavour. They pair beautifully with buttery mashed potatoes, roasted seasonal vegetables, or a fresh herb salad, and are complemented by pan jus, chimichurri, or a tangy yoghurt dressing.
