Superfood Salad (with Turkey leftovers)

Remember that in between Christmas and New year slump we get.  It’s no longer Christmas and the New Year is shining brightly ahead.  We’ve drunk way more than usual and eaten far too much rich food. We’re feeling a little on the go slow from all the glorious festivities. Well, this delicious, super healthy pick me up will make you feel a whole load better within minutes of eating it.

Ingredients


We had about 300g of turkey meat left so shredded it and added it to the mix so that we all get to have a little turkey treat.  

It’s packed full of good healthy energy boosting vitamins and minerals. It’s high in fibre and has a good old protein packed sustainability and carbohydrates. This is the all-round let’s get up and go feel about it.  

The sauce is a must try. It’s a little tart on its own but mixed with the sweetness of the fruits works wonders.  

We’d say it took me around 30 minutes leisurely chopping and slicing veggies of choice to a big bowl.  We’ll list what we used but simply use what raw veggies and fruits you have in.  The more the merrier! Just chop them fine or small

  • 2 large handfuls of spinach
  • 2 satsumas (skinned and pulled apart)
  • 1 large carrot, shredded or sliced very fine
  • 100g Edamame beans
  • 10 radishes, sliced fine
  • 1 large celery stick, sliced fine
  • 80g pomegranate seeds
  • 50g walnuts, chopped
  • A good few shreds of red & white cabbage
  • 15 red grapes halved
  • 1 apple, sliced into thin sticks
  • 50g toasted mixed pumpkin & sunflower seeds
  • 50g fresh coriander (this could be mint or other)
  • 200g Quinoa (cooked to packet instructions) 

Dressing 

  • 1 lime, zested and juiced
  • 1 orange, zested and juiced
