Our Roosters

We produce Roosters once a year only, for Christmas. Akin to Capons, our Roosters are named such as the term Capon refers to a caponised or castrated Cock bird – a practice not carried out in this country.

The Birds

Our cock birds arrive on the farm at four weeks; feathered and ready for both outdoors and in, they’re housed in small flocks in our mobile arcs.  

We appreciate that for a bird of taste to be raised, the time-honoured and traditional farming techniques must be adhered to, which is why you’ll see our birds’ hand-reared, and bedded down every night, away from unwanted visitors!

Able to roam and forage as their instincts dictate, they are fed a delicious mix of additive-free cereal coupled with a mixture of herb off cuts which makes mealtimes not just nutritious but also interesting as they peck away, morning noon and night.

The Herbs

A twice weekly delivery of our seasonal herb off cuts is given to the birds in miniature hayracks, alongside a balanced and additive-free cereal, sourced from a local mill. Sourced from Edward’s aunt and cousin’s farm in the nearby village of Sand Hutton, the provenance and quality of herbs is indisputable.

The combination of this, the local cereal diet and foraged grass and insects makes for happy and healthy poultry.

Sustainable and utterly unique, the wide variety of herbs from chillies to mint and salad are chosen not just for their nutritional value but also to encourage and stimulate the roosters, as they enjoy pecking through their varied meals.

The Taste

Whilst both our Herb Fed chickens and Roosters don’t actually taste of herbs they both boast traditional flavours, with the point of difference being that our Roosters are definitely richer.

A stronger taste, one could say a more old-fashioned flavoured chicken. Some say they’re much more “gamey” – this is because our roosters are game hung to enhance the flavour.
