Add all marinade ingredients to a blender and blend to a paste

Using a sharp knife, make incisions in the drumsticks

Pour half the marinade over the chicken and rub in thoroughly

Marinade overnight if possible but preferably at least an hour

Set up your BBQ with 2 zones – a direct heat zone and an indirect zone. You want it set to 220c. If cooking in an oven, set your oven to 220c

Cook on the indirect side with the lid down for 30 minutes

After 30 minutes, start to brush on the reserved marinade, flipping and brushing on every 5 minutes

Once the chicken hits an internal temperature of 75c, move them to the direct side of the BBQ

Cook with the lid down for 1 minute then flip the drumsticks and cook with the lid down for another minute
